Most limes are harvested between May and November.

Ripeness

Choose plump, fresh, glossy-looking limes that are heavy for their size and have a bright, thin skin. Avoid shriveled, soft limes and those with dry, woody skins. Also avoid mold and bruises.

Storage

Refrigerate for 5 to 7 days,(45 - 55 degrees). Keep limes away from sunlight as this will cause yellowing and faster deterioration.
